Makes 6-10
Ingredients
1 Ripe Avocado
3 Cups Plain Flour
2 tbsp Baking Powder
2 tbsp Lemon Juice
¼ Cup Golden Syrup
2 Cups Milk
Handful Baby Spinach
Butter for greasing
Method
Blend all the ingredients until smooth
Heat a little butter in a frying pan.
Scoop the mix into the pan and cook, on a medium heat until golden brown
Flip and cook the other side until golden brown.
Serve

Banana Pancake Cinnamon Rolls
Ingredients
Pancakes:
2 Ripe Bananas
100g Plain Flour
1 tsp Baking Powder
150ml Vegan Milk
Filling:
1 tsp Cinnamon
2 tsp Caster Sugar
Method
In a mixing bowl mash the bananas until smooth.
Mix the flour and baking powder with the banana.
Stir in the milk.
Over medium heat, pour some of the pancake mix into a frying pan.
Flip the pancakes after 3-4 minutes.
In a separate bowl, mix together the sugar and cinnamon.
When pancakes are cooking, sprinkle the cinnamon and sugar mix over them.
Roll the pancakes up and cut them into slices about 1 inch long.
Stand the pancake rolls up together on a plate.
Top with syrup or vegan yoghurt.
Serve
