Sweet Potato Pizza

Sweet Potato Pizza
Ingredients
Base;
150g Sweet Potatoes
1 tbsp Chia Seeds
2 ½ tbsp Water
1 Cup Strong White Flour
1 tsp Baking Powder
½ tsp Salk (Optional)
Toppings; (I haven’t added quantity as it’s really about preference with pizza)
Tomato Puree
Sweetcorn
Broccoli
Red Pepper
Mushrooms
Vegan Cheese
Method
Peel and dice the sweet potatoes. Place them in a saucepan of boiling water.
Boil the potatoes for about 20 minutes, or until they are soft enough to mash with a fork.
While the potatoes are boiling, make a flax egg by adding the chia seeds and water.
Sift the flour and baking powder into a small separate bowl.
Drain the sweet potatoes and place them in a large mixing bowl.
Preheat the oven 190C
Mash the potatoes with a fork then add the flax egg to them and mix to combine.
Add half the flour mix into the sweet potato mix, mix well with a fork.
Add the rest of the flour and knead with your hands to form a smooth ball.
Place the dough between two large pieces of baking parchment and roll out to roughly ½ “
Remove the top piece of baking parchment and place the bottom one, and the pizza, on a baking tray.
Bake for 10 minutes.
Remove the pizza base from the oven, place the baking parchment back over the top and flip it over. Remove what is now the top piece of parchment.
Top your pizza;
Spread your tomato puree over the whole of the base.
Sprinkle your sweetcorn over the base.
Place the broccoli evenly around the pizza.
Sprinkle the pepper over the base.
Add your mushroom
Sprinkle your cheese over the whole pizza.
Bake;
Bake for a further 10-12 minutes.
Serve

Cauliflower Pizza
This Cauli pizza tastes amazing with our garlic doughballs
Makes a 10-14" Base
Ingredients
Base;
1 Large Cauliflower - Cut into small florets
1 tbsp Chia Seeds
2 ½ tbsp Water
2 Cup Strong White Flour
1 tsp Baking Powder
½ tsp Salt
Toppings - Completely up to you, this is what we used.
Tomato Puree
Sweetcorn
Red Onion
Grated Carrot
Spinach
Grated Cheese
Method
Boil the cauliflower for 20-25 minutes, or until it’s soft enough to mash.
While that’s boiling make a flax egg; mix the water and chia seeds together and set aside until needed.
In a small bowl mix, sift the flour and baking powder. Mix to combine them.
Drain the water from the cauliflower.
Preheat the oven 190C
Mash the cauliflower
Add half the flour into the cauliflower and mix with a fork.
Slowly add the rest of the flour in and knead until you have a smooth dough.
Roll the pizza between two pieces of baking parchment, to make 10” for a thick base or 13-14” for a thinner base.
Remove the top piece of baking parchment, save for later, and place the pizza on a baking tray.
Bake for 10 minutes.
Remove from the over, place the second piece of baking parchment back on the top of the pizza and flip the pizza over.
Remove what is not the top piece of parchment and top your pizza.
Bake for another 10-15 minutes (depending on thickness)
