Delicious Orzo


Orzo, also known as risoni, is a type of pasta shaped as a large grain of rice. This delicous orzo is ridiculously tasty and will be a huge success with anyone you serve it to!


I had a couple of family members over for dinner Friday evening and this is what we served them. It was a huge success!


This meal is like a pasta version of a risotto.


It's the perfect meal for any occasion; It's warm on those colder evenings, great for lunch, perfect for comfort food. You can't go wrong with this dish!


It only takes 35-40 minutes to make and is well worth the wait!


It serves 7 but you can easily adjust this to serve more or less.


You can buy orzo in a supermarket for under £1 per packet. I had never heard of it until Joss suggested we make a dinner with it, that was the same for the rest of my family who tried it. But we were all so impressed and will definitely be making more with it.


I can't reccomend this dish enough, and there are plenty of other uses for it, traditionally it is used in things like soups, but I definitely will be experimenting, to create new and exciting dishes.

Delicious Orzo - Serves 7


Ingredients


4 tbsp Butter I used Flora but any plant based butter will work.

3 Cups Orzo You can buy this in the supermarket for less than £1 a packet.

4 ½ Cups Vegetable Stock

1 Cup Onions - Diced 2 Medium

5 Garlic Cloves - Minced

2 Peppers - Diced

1 ½ Medium Carrot - Diced

½ Large Courgette - Diced

¾ Cup Nutritional Yeast

1 Cup Milk

1-2 tsp Salt

½ tsp Ground Pepper

½ tsp Parsley - You can add more if you would like

Juice from 1 Lime - You can add more if you would like


Method


Melt 2 tbsp Butter in a large frying pan or wok if you have one


Add the onions, garlic, carrots and orzo.


Stir continuously for about 5 minutes or until the otzo has started to brown a little.


Slowly add the veg stock, bring to a boil and add the pepper and courgette.


Simmer for 15-20 minutes, stirring occasionally, until the orzo and carrots are completely cooked.


Add boiling water ½ Cup at a time if the mix is a little too dry. I added an extra 1 cup


Stir in the last 2 tbsp butter, milk and yeast.


Add the salt, parsley, pepper and lime juice.


Let cook for 1-2 minutes


Serve
