Easter Bunny Buns


How cute are these Easter bunny buns? These are the perfect recipe to make for your Easter celebrations! They are simple to make and look so cute, this is a great recipe to make with your children and they taste incredibly good! Perfect for the whole family to enjoy!


This recipe makes 10-12 bunnies, filled with chocolate, perfect for the whole family to enjoy!


You can add some small pieces of chocolate or poppy seeds for eyes instead of the tails, if you would like.


I filled these bunnies with lime and sea salt chocolate. You can buy this from Moo Free. Of course you can use any vegan chocolate you would like.


These buns taste their best when they are warmed up; once they go cold the chocolate in the middle hardens. You can microwave these for 10-15 minutes to warm them up.


These make a great treat to put in your childrens lunch boxes or for them to enjoy for an afternoon snack.


These bunnies are so good, both Katie and I made them, we couldn't resist when we saw a picture of them.

Easter Bunny Buns - Makes 10-12


Ingredients

4 Cups Strong White Flour You can use plain flour instead

½ Cup Caster Sugar

1 tsp Salt

4 tsp Instant Yeast

1 ½ Cups Milk - Warmed + Some for brushing I used oat milk but you can use any plant based milk

2 tsp Vanilla Essence

4 tbsp Butter - Softened I used Flora but you can use any plant based butter.

Olive Oil for greasing

80g Lime & Sea Salt Chocolate - Moo Free - Cut into squares


Method


In a large bowl sift the flour, sugar and salt. Add the yeast.


Mix to combine


Add the warm milk, vanilla and butter.


Mix with a fork until you can’t anymore


Knead with your hands until you have a smooth, elastic dough. About 10-15 minutes


Spread a little olive oil in a clean bow.


Place the dough in bowl, cover with a clean tea towel and place in a warm spot for 1-1 ½ hours or until the dough has doubled in size.


Once the dough has risen, knead for a couple of minutes.


Separate into 3; 1 x 500g, 1 x 300g & 1 x 200g Roughly.


Divide each ball into 10-12 equal pieces and shape like balls.


For each bunny you’ll need 10-12 x 50g for the body, 10-12 x 30g for the head & 10-12 x 20g for the ears.


Place a square of chocolate in the middle of all the bodies and heads and roll them back into balls.


Cut ¾ of the way down, in the middle, of the ears to create a round heart shape.


On a baking tray, assemble the bunnies; a body, head and ears. Make sure the pieces are touching


Preheat the oven 180C


Cover and let rise for 20 minutes.


Brush with a little milk


Bake for 10-15 minutes or until browned and hollow sounding when you tap the bottom.


Enjoy warmed!
