This red Thai curry paste is the perfect sauce to add to your curry! It adds flavour and spice!
I used this paste to make a Thai pumpkin curry, the recipe will be up in a few days, and it was so tasty! It really was the perfect sauce for this curry!

It's a great date night, feel good or family meal! You can't go wrong with this pumpkin Thai curry.

I don't like a lot of spice so I only used 1 chilli but you can add more if you like the heat.
I reccommend adding a little more then tasting it to check the flavouring, you don't want to add to much and have it burn your mouth.
This recipe makes 3 tbsp, which is just enough for the curry I will be posting in a few days, you can easily double the ingredients to make more.
There are only 3 steps to making this super delicious paste; it couldn't be any easier!
The lemongrass can get a little stringy if you don't process it enough, if yours is like that just whizz it a little more.
To make this red Thai curry paste;
You first need to toast the cumin and coriander seeds, in a dry pan, until fragrant.
Grind them in a pestle and mortar.
Add all the ingredients to a food processor and blitz until you have a chunky paste.
Add to your curry's

Red Thai Curry Paste - Makes 3 tbsp
Ingredients
1-2 Red Chillies Taste as you go and add more if you want more heat.
2 tsp Coriander Seeds
1 tsp Cumin Seeds
2 Small LemonGrass Stalks
1 tsp Fresh Ginger - Peeled
3 Cloves Garlic - Peeled
1 Lime Zest & Juice
1 tbsp Tomato Paste
1 tbsp Soy Sauce - Check out our soy free soy sauce here.
Method
In a small frying pan, dry toast the coriander and cumin seeds for a few minutes or until fragrant.
Grind the seeds in a pestle and mortar.
Place all ingredients into a food processor.
Blend until you have a chunky paste
Add to your curries
Serve
Enjoy!
