Rice Krispie Rocky Road


These rice krispie rocky roads are the perfect treat to make with your kids! You can use your left over rice krispies and put basically any ingredients you want in them. Your kids will love making these and why not send them to school in their packed lunches as a treat?


You can also make these rice krispie rocky roads perfect for easter; you can add some vegan mini eggs into the mix or place one on each square.


Moo Free sell white and milk chocolate mini eggs, I'm sure you can find them elsewhere too.


I made 25 small squares, as they are perfect size for my daughter, however you can make them bigger if you would like.


I filled my rice krispie rocky roads with mixed fruit, pistachio nuts and chocolate biscuits. These are all of Maxine's favourites so they were perfect for us, you can add any of your childrens favourites into these or sneak some healthy nuts and seeds in if you are trying to get some slightly more healthy ingredients.


You need to move quite quickly to make these, the longer you take the more likely the marshmallow is to harden and then it wont be spreadable.

Rice Krispie Rocky Roads - Makes 25


Ingredients

2 ½ Cups Melted Marshmallows - You can buy vegan marshmallows in morrisons and I'm sure other supermarkets.

½ Cup Pistachios

½ Cup Mixed Fruit

2 Cups Rice Krispies

3 Chocolate Biscuits - Broken into small pieces You can use your favourite vegan chocolate biscuits


You can use any ingredients in yours that you would like.


Method


Prepare a 20cm square tin with baking parchment


Add the rice krispies into a bowl


Add the melted marshmallows and mix to combine. You need to move quite fast so the marshmallow doesn't harden and become un spreadable.


Add the pistachios, mixed fruit and biscuits to the mix.


Mix until fully combined


Pour mix into your prepared tin and level it out as much as possible


Place in the fridge for 1-2 hours to allow to fully set


Remove from tin and cut into 25 square pieces


Serve
