I LOVE strawberries, that’s why these Vegan Apple and Strawberry Crumble Bars are one of my absolute faves. The sweet flavours from the two fruits mix beautifully together.
This recipe makes about 9-12 squares.
These are a great snack to put in your lunch box, or why not have a slice for dessert with a scoop of ice cream or clotted cream. They can easily be heated up in the microwave. Why not try these with one of our homemade sauce, we have custard, butterscotch sauce and so more that will go perfectly!
You’ll need to let the bars cool fully before cutting into them to make sure the filling has set and the bars will keep their shape. If you want to eat them straight away while they are warm, you will need to use a plate or bowl to stop them from falling apart in your hand.
You can keep these bars in the fridge for up to 3 days if you aren’t going to eat them all straight away. I did not try freezing any, but this may be a good idea if you have made too many, or if you are making them in advance for an event or party.

Apple & Strawberry Crumble Bars - Makes 9-12 Squares
Ingredients
Crumble:
200g Plain Flour
100g Caster Sugar
100g Vegan Butter - I use Flora or Pure but any plant based butter will work
2 tbsp Water
Filling:
1 Cup Apples, Peeled and Cubed
1 Cup Strawberries, Cubed
1 tbsp Maple Syrup - If you want to make this healthier you can use Agave Nectar
2 tbsp Cornflour
Method
Preheat the oven to 180c.
Mix together the flour and sugar.
Use your fingers to mix in the butter to form bread crumbs.
Take ½ cup of the crumble mix and set aside for the topping.
Add the water a little at a time.
Pout the mix into a lined baking tray and use the back of a spoon to flatten the mix.
Bake for 15 minutes.
While the base is baking, prepare the filling.
Add the apples, strawberries and syrup into a pan over medium heat and stir continuously until softened.
Stir in the cornflour and take off heat.
Pour the filling onto the base.
Take the crumble mix you set aside and pour that over your filling. Sprinkle a tbsp of caster sugar on top if you like it really sweet.
Bake for 25-30 minutes or until golden on top.
When cooked, leave to cool at room temperature for 30 minutes.
Then cool in the fridge for 2 hours to set.
Serve
