Are you looking for something super quick and easy to make for lunch or dinner? These vegan bean & cheese parcels are perfect! They are super quick to whip up, they are filling and taste amazing!
I make them using ready made vegan puff pastry sheets, this is what makes them so quick to make. If you want to make them with homemade puff pastry that is amazing but will be time consuming!
I have not been able to make vegan puff pastry from scratch yet. I would really love to but unfortunately I have not had the time. Puff pastry can take all day to cook, especially vegan puff pastry as the butter is much softer and melts quicker.
I can't wait to one day try to make puff pastry but I don't think it will be until my daughter goes to school. It's something to look forward to.
I love the vegan puff pastry, it makes so many super tasty things but they are made so much quicker.
These bean & cheese parcels can be made in about 5 minutes and then they take about 15 minutes to cook, so it's perfect if you just want to whip something tasty up for the family to enjoy.
They also taste great cold, so on a sunny day you can make them in the morning and enjoy them with some salad for lunch.
As you can see by one of the pictures I posted, we had ours with salad and some spiral potatoes. They tasted amazing!
If you want to see how to make the spiral potatoes I am going to post a little video on instagram in the next couple of days, I wont do a full recipe post for it though as it's so quick.

Bean & Cheese Parcels - Makes 8 Minis or 4 Large
Ingredients
1 Vegan Puff Pastry Sheet - I get this from the supermarket, it's called Jus Rol
¾ tin of Beans - You want to drain the liquid out so the pastry doesn't get too wet.
¼ block of vegan Cheese - Grated - I use violife, you can buy this ready grated or you can get a block to grate it yourself
Milk to glaze - I use Oat milk but you can use any plant based milk.
Method
Preheat the oven 180C and prepare a baking tray
Unroll your puff pastry sheet and cut into 8 rectangles. If you want to make bigger ones you just cut the pastry into 4
Place a 1-2 tbsp of beans on one side of each rectangle, leaving about ½ cm gap around the edge.
Place a small handful, about 1 tbsp of cheese on top of the beans.
Brush a little milk around the edge of the pastry.
Fold the empty side over the top of the beans and gently press down to seal the edge, I used a fork.
Cut 2 small steam hole in the top of every parcel
Brush the top of the parcel with a little milk
Bake for 10-15 minutes or until the pastry has browned slightly
Serve
