As I've previously said, I LOVE blackberry picking! It's something my family have always done together and we all enjoy making desserts with the blackberries after!
Who doesn't love blackberry pie!
This vegan blackberry pie is so tasty! Not too sweet! And it's the perfect summer dessert for a family meal!
If you make this for your family they are sure to be impressed!
You can make this one with any other berries, it doesn't have to be blackberries!

Ingredients
Pie Crust;
225g (2 ½ Cups) Plain Flour
50g (¼ Cup) Butter
50g (¼ Cup) Trex - This is vegan lard, you can find it with the normal butter in the supermarket. It's about 70p.
You can use just butter instead of using trex but I think using trex makes the pastry better.
My dad bought a recipe box at a car boot sale, when I was little, with very old recipes. They are Kathie Webbers - All-star cookery card club.
I have always made my pies with the recipe from that box, but I have always used trex instead of lard. So my recipe for blackberry pie is using that recipe for the pie crust.
I personally think you can beat the old vintage recipes!
When I get the chance I am going to try and make a few more of those recipes vegan, I look forward to sharing them with you!
Little cold water.
Pie Mix;
6 Cups Blackberries
1 ½ Cups Caster Sugar
½ Lemon Juice
½ Lemon Zest
½ tsp Ground Cinnamon
4 tbsp Tbsp Cornflour
Method
* Place the blackberries in a large bowl.
* Gently mix with the sugar, lemon juice, zest, cinnamon and cornflour.
* Let sit for 30 minutes. This gives the ingredients time to blend together and all the juices to flow out.
* Meanwhile make the pie crust.
* Sift the flour into a large bowl.
* Rub the butter and trex in to make breadcrumbs.
* Add a little cold water at a time and mix to create your dough.
* Preheat the oven 200C
* Grease your pie dish.
* Roll ⅔ the dough out and place in your pie dish.
* Transfer your blackberry mix into your pie.
* Roll out the last of the dough and place on the top of your pie.
You can lattice if you want.
* Brush a little milk over the top.
* Bake for 30 minutes
* Turn the oven down to 150C
* Put foil over the top of your pie
* Bake for another 30 minutes. This extra 30 minutes is what dries the juices out in the pie, otherwise your pie wont hold together because the juices will make the pastry soggy.
I have tried making my pie without this extra half an hour but I find the blackberries are still quite sharp when you do that.
