Brioche is one of my favourite sweet breads. I was so excited to make this vegan brioche, and it didn't disappoint!
When I was growing up, we used to buy a brioche, tear and share, swirls at christmas. It was one of my favourite treats!
I would like to recreate the swirls when I can. To make those, you just need to roll the bread into a long rectangle and roll it up like a swiss roll. cut into thick slices and place near each other in the oven so they will attach while cooking.
This brioche is plain vanilla flavoured, but you could easily add some chocolate chips or if you make the swirls you could make a chocolate spread before you roll it up.
This brioche recipe is super easy to follow and you will love the results!
To make this vegan brioche;
Sift the flour into a large bowl.
Add the sugar, milk, melted butter, yeast, vinegar, vanilla and salt to the flour.
Mix to create a dough and then knead the dough for 5 minutes, or until it is soft and elastic.
Leave the dough in the bowl, cover the bowl with a damp tea towel and place in a warm place for up to 2 hours. Or until the dough has doubled in size.
Cut the dough into 4 equal pieces. Shape each dough into a mini loaf.
Place your mini loaves into your prepared loaf tin.
Cover again with a damp tea towel, place in a warm place for 30 - 60 minutes.
Place in the oven for 30-40 minutes or until the dough has browned on the top. To be sure your brioche is baked you can tap the bottom, if it sounds hollow it is done.
Straight after the bread has come out of the oven, brush it with you golden syrup.
You can use maple syrup or agave nectar instead of golden syrup.
Let cool for 15 minutes, this gives the syrup chance to soak in a bit.

Ingredients
3 ⅓ Cups Plain Flour
⅔ Cup Milk - I use oat milk but any plant based milk will work.
¼ Cup Granulated Sugar
¼ Cup Melted Butter - I use Flora but any plant based butter will work.
2 ½ tsp Easy Bake Yeast
2 tbsp Cider Vinegar
3 tsp Vanilla
½ tsp Salt
2 tbsp Golden Syrup - You can use maple syrup or agave nectar instead.
Method
Sift your flour into a large bowl.
Add the sugar, milk, melted butter, yeast, vinegar, vanilla and salt to the flour.
Mix together to create a dough.
Knead for 5 minutes or until the dough is soft and elastic.
Place back into the bowl and cover with a damp tea towel.
Place in a warm place for up to two hours or until doubled in size.
Prepare your loaf tin.
Divide the dough into 4 equal pieces.
Shape each piece into a mini loaf.
Place all 4 loaves into your prepared loaf tin.
Cover with your damp tea towel for 30-60 minutes.
Preheat the oven 180C
Bake for 30-40 minutes or until the dough has browned and when you tap the bottom it sounds hollow.
Once just out the oven, brush the golden syrup over the brioche.
Leave to cool for 15 minutes - This gives the syrup time to soak in a little.
Serve
