These Vegan Carrot Cake Flapjacks are a delicious and healthy breakfast or snack.
They are filled with lots of great natural goodness from the carrots, walnuts and maple syrup.
The syrup and vanilla make these flapjacks sweet to taste.
Carrot cake is one of my favourite cakes, I love the flavour of the cinnamon and spices. These carrot cake bars are full of the same tasty flavouring but within a healthy oaty bar.
Porridge is always a good option for breakfast, it is full of great fibre and will give you energy all morning. These bars make your normal porridge more delicious!
This recipe makes 9-12 bars depending on how big you want them.
This is a great recipe to let your kids help with, they will really enjoy making these and so will you!
Carrot;
Carrots are a great source of fiber, vitamin K, A & B6 and antioxidants.
Carrots could help with weight loss.
They are linked to lower cholestorel levels, lower risk of cancer and improved eye health.
Walnuts;
Walnuts provide healthy fats, fiber, vitamins, minerals and are rich in antioxidants.
They are an amazing source of omega 3s.
Walnuts may help decrease inflammation and reduce risk of some cancers.
Study suggests walnuts are good for weight control and may help manage and lower the risk of type 2 diabetes.
Maple Syrup;
Maple syrup contains vitamins, minerals and antioxidants.
It may help reduce risk of cancer.
It helps fight inflammotory diseases and prtect skin health.
Porridge Oats;
Porridge oats are amonst the healthiest grains on earth.
They are an excellent source of vitamins, minerals, fiber and antioxidants.
They help with weight loss, lower blood sugar levels, reduce risk of heart disease and help skin care.

Carrot Cake Flapjacks - Makes 9-12
Ingredients
2 Cups Porridge Oats
1 Cup Grated Carrot
½ Cup Chopped Walnut
1 tsp Ground Cinnamon
½ tsp Ground Ginger
½ Cup Vegan Butter
¼ Cup Maple Syrup
1 tsp Vanilla
1 tbsp Ground Flaxseed + 3 tbsp water To make a flax egg
Method
Line a baking tray.
Mix the flaxseed and water and set aside. This makes a flax egg.
On medium heat, melt the butter and syrup until well combined.
Take off the heat and stir in the vanilla.
In a separate bowl combine the oats, carrot, walnuts, cinnamon and ginger.
Pour in the butter mix and flax egg.
Stir until all the dry ingredients have mixed with the wet.
Let sit for a couple of minutes so the oats can absorb the butter.
Pour the mix into the lined baking tray and use a fork or spoon to press it down.
Refrigerate for 2 hours.
Serve
