Vegan Cheesy, Rosemary & Chives Biscuits

As some of you may know, I have an almost 2 year old daughter. When she's teething she only wants to eat breadsticks and biscuits, not the most healthy. Because of this I try to find mostly healthy things she can enjoy while teething. These vegan cheesy, rosemary & chives biscuits were a successful attempt at this!


Maxine loved these biscuits! They seemed to be a biscuit that she's more than happy to eat while teething, and hopefully the rest of the time too.

I of course tried these with my family as well, just to be sure, everyone loved them! They are definitely preferred fresh out the oven, but what isn't!


They have more of a scone like texture than biscuits, but that is what makes these savoury biscuits so delicious!


This recipe makes 8 large biscuits. They would make a perfect snack or even lunch, if you are looking for a light lunch. I would highly recommend trying these warm with some cream cheese, or with some salad, how delicious does that sound!


These are the perfect thing to serve at a family gathering, or a party if you are looking for something a bit different to serve! They will be a hit!


This recipe is super easy to make, it only takes about 10-15 minutes to whip up and then it's just baking which only takes 12-14 minutes. So quick if you want to whip them up for lunch or for a party.

Cheesy, Rosemary & Chive Biscuits - Makes 8


Ingredients


2 Cups Plain Flour

2 tsp Baking Powder

½ tsp Bicarbonate of Soda

1 tsp Granulated Sugar

¾ tsp Salt - Sea salt it better but any salt you'd like will work.

½ tsp Garlic Powder

1 tsp Dried Rosemary

1 tsp Dried Chives

1 Cup Milk - I use oat milk but any plant based milk should work.

¼ Cup Butter - I use Flora, it's our favourite but I'm sure any plant based butter would work.

1 tbsp Lemon Juice - about ½ lemon

1 ½ Cup Cheese - Grated - I use Violife but use your favourite vegan cheese!


Method


* Preheat the oven 220C and line a large baking tray


* In a large bowl, sift the flour and bicarbonate of soda.


* Add the sugar, salt, garlic powder, rosemary and chives. Mix to combine.


* In a small bowl, melt the butter.


* Add the milk and lemon juice to the butter. Mix together.


* Stir the wet ingredients into the dry.


* Add the cheese. Mix so the cheese is evenly spread. It should be a dough at this point, you may need to use your hands to knead the cheese in, to spread it evenly.


* Scoop ¼ cup for each biscuit, place on the baking tray. The biscuits will spread so don't panic about keep the mix in the perfect shape.


* Bake 12-14 minutes.


Serve
