This Vegan Chickpea and Vegetable Stew is a delicious warming meal. This recipe makes enough for 2 meals. It takes about 30 minutes to make this stew and only a couple of minutes to heat up and leftovers.
This is a great recipe to make in advance and leave in the fridge to warm up later, or to have the leftovers the next day.
The herbs mix beautifully with the vegetables and fill the meal with delicious flavours. This meal is filled with goodness from the vegetables, herbs and chickpeas.
I love warming meals like this when I am ill, or if it is a cold day. It is perfect for the winter months, or during those summer days when the sun doesn’t make an appearance.
It is also perfect to make in advance in the morning or even the day before, especially on the days you know you're going to be pushed for time at dinner time and need something quick.
I had this with a side of fresh focaccia bread. Any bread will go well with this stew. You could even add some dumplings if you need a little extra something.

Chickpea & Vegetable Stew - Serves 2
Ingredients
1 Medium Red Onion, Diced
1 Large Garlic Clove, Diced
1 Medium Red Pepper, Diced
1 Cup Broccoli Florets
½ Cup Cherry Tomatoes, Halved
1 Tin Chickpeas
2 Veg Oxo Cubes with 2 Cups boiling water
1 tsp Ground Pepper
1 tsp Dried Chive
1 tsp Dried Rosemary
1 tsp Dried Basil
Method
Lightly fry the onion and garlic.
Add the peppers and broccoli and fry for 30 seconds.
Pour in the oxo cubes with boiling water.
Simmer for 5 minutes.
Mix in the tomatoes and chickpeas.
Simmer for 2 minutes.
Stir in all the herbs.
Simmer for another 5-10 minutes.
Serve
