Who doesn't love chow mein? And with this twist, we have made carrot noodles to go with it!
It's the perfect combination and makes this meal even healthier and tastier!
It's quite a quick recipe to make and totally worth it!

Ingredients
1-2 Large Carrots - Depending on how much noodles you want
1 tbsp Olive Oil
4 Garlic Cloves - Thinly sliced
1 Small courgette - Sliced in strips
1 Bell Pepper - Sliced in strips
¼ Small Red Cabbage - Sliced
4 Spring Onions - Sliced
2 Cups Bean Sprouts
2 tbsp Soy sauce or Vegan Worcestershire sauce
2 tbsp Rice Wine
1 tsp Caster Sugar
Salt and Pepper to taste
Method
* Using a spiraliser, create your carrot noodles.
* In a small bowl mix the soy sauce, rice wine and sugar.
* Mix in 1-2 tbsp water.
* Heat the oil in a wok or large frying pan.
* Fry the garlic until fragrant.
* Add the carrots and cabbage. Fry for 2 minutes.
* Add the courgette and pepper.
* Mix in the noodles and the prepared sauce. Cook for 3-4 minutes. Until the noodles are almost cooked.
* Season
* Add the spring onions and bean sprouts, cook for 2-3 minutes.
Serve
