This Vegan Cinnamon Toast Cereal is a childhood favourite that is so easy to make! This recipe makes about 4-5 bowls, so plenty to last you almost a week, or for the whole family to share.


I got this idea from halfbakedharvest on Instagram. With a few of my own changes to suit my tastes I believe it is one of the most delicious cereals you will ever try!


You're probably wondering how it compares to the store bought cereal. Well it is much crunchier, much tastier, and just all round more delicious.


Not only will kids love this cereal, but it is also simple enough that they can help make it. Which is also a perfect way to keep them busy while they are at home.

The vanilla and syrup in the recipe adds extra sweetness to the dough. The butter on top of the dough creates flakier squares, as well as helping the cinnamon and sugar stick when transferring to the baking tray.


Cereal usually goes great with milk, and this is no exception. You could also eat them dry if you prefer. They make a great snack during the day.

Cinnamon Toast Cereal - Makes 4-5 Bowls


Ingredients


1 tbsp + ½ tsp Cinnamon

¼ Cup Caster Sugar

2 ½ Cups Plain Flour

1 Cup Cold Vegan Butter

2-4 tbsp Melted Vegan Butter

1 tsp Vanilla

1 tsp Maple Syrup

½ Cup Cold Water


Method


Preheat your oven to 180c.


Combine 1 tbsp cinnamon with the sugar and set aside.


Combine the flour, cinnamon and butter.


Use your fingers to form bread crumbs.


Add the vanilla and syrup.


Mix in the cold water 1 tbsp at a time until the mixture forms into dough.


Cut the dough in half and set one half to the side.


Roll out the first half of the dough as thin as you can, onto a well floured surface.


Brush the dough with the melted butter.


Generously sprinkle the sugar and cinnamon mix to cover the dough.


Gently pretty the sugar into the dough.


Evenly cut squares into the dough about 1inch squared.


Place the squares with a small space between them on a lined baking tray.


Bake for 12-14 minutes.


Serve
