This Vegan Fruit Loaf is full of delicious flavour and is a great breakfast or snack. This is a really easy recipe to make and chances are you will have all the ingredients already.
I love using fruit in baking, it adds the perfect sweetness to any cake or loaf. This fruit loaf is the perfect addition to a coffee or tea meet up with your loved ones. It is also perfect for a high tea if you are after something a little fancier; perfect for mother’s day.
I used a pack of dried mixed fruits to make this, however you can use specific dried fruits if you would like. Some dried cranberries, apricots ect would go so well in this loaf.
If you are making this loaf for mothers day, why not use her favourite dried fruits.
This loaf lasts longer than most cakes and will retain its moisture for 5-7 days as long as it is kept well wrapped, so you won’t have to worry about it going bad before you’ve had a chance to eat it. The leftovers are perfect for any surprise guest that shows up at your door.
For a little extra flavour spread a thin layer of vegan butter over your slice of fruit cake. This is especially good if you are having it for breakfast.
The recipe starts by soaking the dried fruit in tea, this helps to top the fruit from burning in the oven, especially those that are on the edges of the cake. It also helps to keep the cake moist and preventing it from drying out too quickly.
No decoration is required with this fruit loaf as it looks great as it is and is plenty sweet enough without icing, this just adds to how quick and easy it is to make.
However if you would like to decorate, some royal icing dripped over the top would be great!

Vegan Fruit Loaf
Ingredients
200g Dried Fruit
180ml Strong Tea
90g Caster Sugar
1 tsp Ground Ginger
1 tsp Ground Cinnamon
160g Plain Flour
1 tsp Baking Powder
1 tsp Bicarbonate of Soda
3 tsp Oil
Method
Brew the tea until strong.
Soak the dried fruit in the tea until it has cooled down.
Preheat the oven to 160c.
Mix together the flour, sugar, ginger, cinnamon, baking powder, and bicarbonate of soda.
Add the fruit, tea, and oil and fold together until combined.
Spoon the mixture into a lined loaf tine and flatten the mixture.
Bake for 40-50 minutes.
Let cool before removing it from the loaf tin.
Serve
