Vegan Jammie Dodgers

Valentine's day is fast approaching. Are you looking for the perfect homemade treats to give to your loved ones?

Everybody loves jammie dodgers!

These vegan jammie dodgers are the perfect present/treat for you to give to your family!


Maybe you are looking for something for your kids to help you make to give to their mum or dad?

These jammie dodger are fun, easy to make, super impressive and ridiculously tasty! They are perfect!


Katie and I made these for a family day, so everyone could try them to let us know what they thought.

My dad in particular loves jammie dodgers, so the pressure was on to get them right!

Everybody loved them, they didn't make it longer than about 30 minutes before all the biscuits were gone!

My 1 1/2 year old daughter is a super important tester as well, I always like to make sure if things are appropriate for toddlers. Maxine loved the #jammiedodgers, she has been teething and they were one of the only things she enjoyed to eat.

The circular cookie cutters need to be roughly 2" wide with fluted edges. If you don't have these then plain circular ones will work.

You will also need a very small heart shaped cookie cutter. I however did not have this so I used foil.

If you roll the foil up, tightly, and flatten it. Cut the foil to the correct size and bend it into the heart shape. There you have it, a very easy way to make a heart shaped cookie cutter!


The dough is quite soft, this means you will need quite a lot of flour on the side, for when you roll the cookies out. You may also need a palette knife to gently move them from the side to your baking trays.


The recipe makes 16 amazing jammie dodgers, plenty to share around! You can't go wrong!

Jammie Dodgers - 16


Ingredients


150g Butter - We use Pure but any plant based butter will work

90g Caster Sugar

1 tsp Vanilla

225g Plain Flour

3 tbsp Seedless Raspberry or Strawberry Jam


Method


*Preheat the oven 160C and Prepare 2 large baking trays with baking parchment.


* Cream together the butter and sugar.


* Add the vanilla essence


* Sift the flour in.


* Mix to a dough.


* Lightly flour a clean surface. The dough is quite a soft one so make sure you use plenty of flour on the side and on the rolling pin.


* Roll your dough to roughly 1/2 cm thick.


* Using a 2” circular cookie cutter, cut as many circles out as possible. Keep the number even. Ideally you want the cookie cutter to have fluted edge. This makes the jammie dodger look correct.

If you don't have one then you can use a plain circular one.


* Cut heart shapes out of the centre of half the circles. If you don't have a heart cookie cutter you can do what we did. We rolled up some tin foil, tightly, and created the heart shape that we wanted.


* Bake for 15-20 minutes

Don't forget to bake the small heart shaped biscuits too.

Why not try dunking them in chocolate once they are cooked. Yum!


* Once the cookies are out the oven, on a cooling rack, put the jam in a small bowl.


* Mix the jam, gently, to soften it and remove any lumps.


* Once the biscuits have cooled, spread the jam from the middle of the biscuits (without the heart shapes in them) to cover almost to the edges. You don't want to put too much jam in, or too close to the edge, as when you put the top on it will all fall out the edge.


* Place the heart shaped ones on top and gently press down.


* Serve straight away or for the best consistency leave them, in an airtight container, for 24 hours.
