Vegan Lemon Curd


This simple Lemon Curd is a deliciously refreshing summer sauce! It is simple to make and goes great with a range of different things.


Try this lemon curd on toast, drizzled over your dessert, or even by the spoonful if you are a lover of lemon! Alternatively use it for a lemon tart, or with biscuits. There are so many things you can use lemon curd for, so it’s a great one to have.


Homemade lemon curd has so much more flavour than if you buy it from the supermarket. It is an easy one to make and can often be difficult to find vegan lemon curd in the shops, so you may as well make it yourself.


The turmeric in this recipe is completely optional and does not add to the flavour at all, it just gives the mix that bright yellow colouring.


This recipe only takes about 10 minutes to thicken and can be used straight away when it's warm if that's how you like it. However, if you prefer to enjoy lemon curd cold it will need at least 2 hours to cool completely. So, this recipe may require a bit of patience.

This recipe makes roughly 2-3 cups of lemon curd.


If you like extra lemony flavour you can taste the curd and add some extra lemon juice and zest.

Lemon Curd - Makes 2-3 Cups


Ingredients


1 Cup Vegan Milk - We use Oat milk but you can use any plant based milk.

½ Cup Lemon Juice

1 tbsp Lemon Zest

1 Cup Caster Sugar

2 tbsp Cornflour

2 tbsp Vegan Butter - We use flora but you can use any plant based butter.

¼ tsp Turmeric


Method


On medium heat, melt the butter.


Add the milk and sugar.


Stir until combined.


Add the lemon juice, lemon zest, and cornflour. Taste the mix to see if you find it lemony enough. If you would like some extra lemony flavour you can add a little more lemon juice and zest.

Make sure you taste every time you add any more.


Stir continuously until thickened. About 5 minutes.


Stir in the turmeric.


Serve
