Vegan Lemon & Poppy Seed Scones

My family and I were discussing vegan cream teas, nowhere in our area does them.

So of course I had to find a recipe of scones. So here is my vegan lemon & poppy seed scones.


These scones are the perfect texture and they taste amazing with a little jam and cream!

They make a great breakfast!


If you would like your scones to taste very lemony you can add some lemon extract.


This recipe makes 10 scones. Perfect for a cream tea.


Ingredients


4 Cups Plain Flour

⅓ Cup Granulated Sugar

1 tsp Baking Powder

½ tsp Bicarbonate of Soda

1 tbsp Poppy Seeds - You can also use chia seeds

⅔ Cup Milk - I use oat milk but you can use any milk of your choice.

2 tsp Lemon Zest

⅓ Cup Lemon Juice

1 tsp Vanilla Essence

¼ Cup Yoghurt

½ Cup Butter - I use Pure


Method


* Preheat the oven to 200C


* In a large bowl sift the flour, baking powder and bicarb.


* Add the sugar and poppy seeds.


* In a seperate bowl mix together the milk, lemon zest, lemon juice, vanilla essence and yoghurt.


* Mix the butter into the flour mix to make a crumbly mix.


* Slowly add the wet ingredients to make a dough.


* On a lightly floured surface roll the scones out to roughly 2 inches thick.


* Cut your scones out and place on a baking tray.


* Using a pastry brush spread a little milk over each scone.


* Cook for 30-40 minutes or until browned.


Serve
