Vegan New Potato Florentine


How tasty does this vegan new potato florentine look? This makes the perfect side to any meal; Enjoy as potato patties or as mash potato on the side, you can't go wrong!


This is a super easy dish to make, only taking 30 minutes tops. Once the potatoes have been boiled it only takes about 10 minutes until you are ready to serve.


This recipe makes 2-4, depending on the size you make them. I made 2 large florentines, they were incredibly filling and ridiculously tasty!


There's so much more you can do with this recipe; You can add vegan mayo or any other sauce you would like, you can add any herbs that you would like or you could even add extra vegetables to the mix - either chunks or to be mashed with the potatoes.


New potatoes;

New potatoes are packed with nutrients; Vitamins, minerals and antioxidants.

They may help improve blood sugar control and digestive health.

New potatoes are very filling.


Spinach;

Spinach originated in Persia and is related to beets & quinoa.


Spinach is rich is vitamin A,C and K. It is also filled with magnesium and iron.

Spinach may help with eye health, reduce stress and reduce blood pressure levels.

It could also help prevent cancer.


Please do your own research on both of these, there is still so much to find out.

To make these new potato florentines;


Boil the new potatoes in salty water, until they are ready to be mashed. This should take 20-25 minutes.


Mash the potatoes to your liking, you can leave some lumps if that's what you like.


Melt the butter and pour it into the potatoes.


Use the residue from the butter to wilt the spinach and add that to the potatoes too.


Season however you would like and mix to combine all ingredients.


Shape into patties if you would like to

New Potato Florentine Makes 2-4


Ingredients


500g New potatoes

300g Spinach

Butter, Salt & Pepper to taste


Method


Boil the new potatoes in salted water, leaving the skin on, until they are able to be mashed. This should take about 20-25 minutes.


Drain the water from the potatoes


Mash the potatoes until you are happy with them. You can leave some lumps if you would like.


Melt a little butter in the saucepan.


Pour the melted butter into the potatoes.


Add the spinach to the saucepan, the heat from the melted butter should help to wilt the spinach.


Add the wilted spinach to the potatoes.


Season the potatoes and mix till everything is combined.


Shape the potatoes into 2 - 4 patties, depending on the thickness.


Serve
