I'm sure everyone is aware of and joining in with the Thursday clap for NHS. Alot of people are posting rainbows in their windows and in our area lots of houses have tributes outside. I wanted to say thank you and make a tribute as well so I made these vegan NHS/Key worker sugar biscuits.
These are great if you want to make a thank you for any NHS or key workers that you know! They taste amazing and they are so cute!
Why not let your kids decorate them and leave them out for the postman or drop them off in your corner shop as you past on your hours walk.
These are a great way of both entertaining your children and saying thank you to all the key workers and NHS workers!

These sugar biscuits are super easy to make and fun! You and your children are sure to love it!
Most vegan biscuit recipes require you to put the dough in the fridge before you roll it out, this is because the dough is too soft to roll out.
This dough does not need you to put it in the fridge, however, if your dough is too soft don't be afraid to put it in the fridge for a little while.
To make the icing you just sift the icing sugar into a mixing bowl. Then slowly add the little water and mix it until it reaches the consistancy you would like. Remember you want the icing to be quite thick so it wont run off the edge. Some of mine still ran a little off the edge, don't worry if this happens.
When you add the food colouring the icing will get even runnier.

If you put a base layer of icing on, to cover the biscuits, you will need to let the icing dry before adding any writing or extra pictures.

NHS Biscuits Makes 16
Ingredients
Biscuits;
½ Cup Butter - I use Flora but any plant based butter will work.
½ Cup Granulated Sugar
¼ Cup Light Brown Sugar
1-2 tsp Vanilla Essence
½ tsp Bicarbonate of soda
1 tbsp Hot Water
1 ¾ Cup Plain Flour
1 tbsp Cornflour
1 tsp Baking Powder
2 tbsp Milk - I use Oat milk but any plant based milk will work.
Decorating;
500g Icing Sugar
¼ Cup - 1 Cup Water
1-2 tsp Vanilla Essence
Food colouring of choice
Method
Biscuits;
Preheat the oven 170C and prepare 1 large baking tray with parchment.
Beat the butter and both sugars together until smooth.
In a small bowl mix the bicarbonate of soda and hot water until the bicarb has dissolved.
Add the bicarb mix and vanilla to the butter. Mix together.
In a small, separate bowl, sift the flour and baking powder.
Gradually add this into the butter mix. Mix it in before adding the rest.
Add the milk 1 tbsp at a time until a dough comes together.
Roll the dough out on a lightly floured surface.
Cut out your shapes and place them onto the baking tray.
Bake for 10-15 minutes.
Let cool completely before decorating.
Icing;
Sift the icing sugar in a mixing bowl.
Add the vanilla in and mix to combine.
Add a little water at a time until your icing is a thick mix.
Separate and add any food colouring you would like.
Transfer your colours into piping bags
Decoratings;
Once the biscuits are completely cooled you can decorate.
Decorate how ever you would like
To fill the biscuits create; Pipe a border first and then fill the biscuits.
Let these harden before you pipe any icing on top.
Serve
