Vegan Pizza Crackers


My daughter has been teething, this puts her off her food and she really only wants to eat biscuits. These vegan pizza crackers have turned into one of her favourite snacks while she's teething!


What does your baby like to eat when their teething? I hope these will become your babies favourites too!


I think these taste amazing, they are one of my favourites as well!

These make a great snack while on long walks, at picnics or just when you get a bit peckish.

To make these pizza crackers you first need to make the dough;


Whisk the tomato pasta and water together until the pasta has disolved.


In a large bowl sift the flour and baking powder.


Add the salt, oregano, basil, tomato paste mix and nutritional yeast to the flour mix.


Knead the mix to create a dough.


Gently knead your grated cheese in, I used 1 1/2 cups but I think an extra half would be great. Or you could add some to the top just before they go in the oven.


Roll the dough on some baking parchment, as thin as possible.


But into small rectangles, as many as possible. I used small pizza cutters but you can use a sharp knife to cut the squares. A pizza knife works great.


You can make these whatever size you would like but I made mine about 2" x 1".I think this is the perfect size!


Bake them for 20 minutes or until they are crisp.

Pizza Crackers - Makes 45-50


Ingredients


½ Cup Water

1 tbsp Tomato Paste

1 ⅔ Cup Plain Flour

½ tsp Baking Powder

1 tsp Salt

1 tbsp Dried Oregano

1 tbsp Dried Basil

1 tbsp Nutritional Yeast

1 ½ Cup Grated Cheese

1 tsp Olive Oil


Method


Preheat the oven 200C and prepare a baking tray


Whisk the tomato paste and water together until the pasta has dissolved.


In a large mixing bowl sift the flour and baking powder.


Add the salt, oregano, basil, tomato pasta and nutritional yeast.


Knead together to create a dough.


Gently knead in the grated cheese.


Roll out your dough, on baking parchment, as thin as possible.


Cut into as many small rectangles as possible. I managed to make 50


Bake for 20 minutes or until crispy.


Serve
