Vegan Potato Paprikash


I decided to make this Vegan Potato Paprikash meal one night as I had some potatoes that needed using. I looked up vegan potato dishes online but as it was also nearly shopping day I didn’t have a lot of options.


This recipe was a great find, it doesn’t use too many ingredients, and you will probably have most of them already. It makes enough for two meals.

By cooking the potatoes in the sauce they will soak up all the delicious flavours. However, if you want a quicker meal, try boiling the potatoes before or cutting them into smaller pieces.


This meal will go great with a side of crusty bread, or garlic bread. Check out our bread page here to decide what to pair it with. If you would like a bit of a creamier meal you could also add a tablespoon of sour cream at the end.

Potato Paprikash - Serves Two


Ingredients


2 tbsp Oil - You can use any oil you would like for this.

3 Large Potatoes, Cubed

1 Medium Red Onion, Thinly Sliced

2-3 Garlic Cloves, Diced

2 tbsp Paprika - You could also try using smoked paprika

1 Cup Boiling Water + 1 Vegetable Stock Cube

½ Tin Chopped Tomatoes

½ Tin Chickpeas - Drained and rinsed

You could add some chilli flakes or powder if you would like to add a little heat.


Method

Heat oil in a frying pan on medium heat.


Add the potatoes and fry until brown.


Stir in the onions and garlic until softened.


Add the paprika and mix to coat the potatoes.


Pour in the vegetable stock cube immediately to stop the paprika from burning.


Let boil for a few minutes.


Bring heat back down to medium.


Stir in the tomatoes and chickpeas.


Simmer for 15-20 minutes, until the potatoes are soft.


If the potatoes are not softening, add another cup of boiling water and simmer for another 5-10 minutes.


Serve
