This Simple Quinoa Salad is delicious and easy to make and perfect for the summer. It's full of great classic flavours that go perfectly together.
The quinoa is a very nutritious addition to your salad. It is higher in fibre than most grains. It is also high in protein and antioxidants. As well as this quinoa is naturally gluten free.
The quinoa will keep you full for longer than just the salad alone, which will help prevent you from snacking later.
This is a really cool and refreshing dish for lunch or dinner, especially when you have been out in the sunshine. Alternatives, why not serve it as a side salad? This would go great with a bbq or picnic.
This recipe is enough for 1 large portion. For more people just add more of each ingredient. If you are using this recipe for a side salad to accompany another meal, this recipe should make enough for 4 meals.

Simple Quinoa Salad - Serves 1
Ingredients
Salad:
½ Cup Quinoa, Boiled
¼ Cup Cucumber, Diced
¼ Cup Cherry Tomatoes, Diced
1 Cup Mixed Leaves, Diced
For dressing:
1 tbsp Oil
½ tbsp Balsamic Vinegar
½ Spring Onion, Sliced
Method
Combine all salad ingredients.
Combine all the ingredients for the dressing
Drizzle dressing on top.
Serve
